If you've never tried Tempeh before, the best way to try it is in it's most basic form. No masking the taste or texture - that can come later. I only recently discovered Tempeh, and it has been a revelation!

Incredibly high in protein, and packing plenty of dietary fibre, pan-fried tempeh with salad is not only quick and easy but very filling too. The tempeh itself I find has a 'mushroom' style taste, but more 'meaty' texture. Others say it tastes nuttier.

The wonderful thing about salad is that you can make it as plain and simple, or as complex as you want. I typically add lettuce, cucumber, sweet pepper, beetroot, onion and grated carrot. If I have them to hand, I'll add olives, peas or avocado too. When it comes to salad, pretty much anything goes.

I don't use salad dressing very often, simply because the shelf-bought products are usually laden with added sugar. I really should start making my own! I do however add a tablespoon or two of full-fat mayonnaise, which I find helps 'bind' everything together. A dollop of french mustard, mixed in with the mayo, is delicious too.

Add the olive or coconut oil to a pan on a low heat

Dice the Tempeh block into cubes.

Add the Tempeh to the pan, on a low to medium heat. Stir often until all sides are golden brown - between 10 and 15 minutes

While the Tempeh is frying, prepare your Salad.

Add the golden brown tempeh to the salad, and enjoy!
